Coffee Walnut Cake


  • 250g butter
  • 1 cup castor sugar
  • 2 eggs
  • 2 tsp. instant coffee
  • ½ cup chopped walnuts
  • 2 tsp. coconut milk
  • 1 ½ cups self-raising flour
  • ½ milk


  1. Cream butter and sugar.
  2. Add eggs and beat until evenly mixed.
  3. Stir in coffee and coconut milk.
  4. Alternatively stir in the self-raising flour and the milk, one-third at a time until well-mixed.
  5. Add in walnuts and stir.
  6. Pour into well-greased cake tin and bake in moderate oven for 30-40 minutes.
