Chinese New Year Peanut Cookies

Many thanks to my friend Joyce who gave me this recipe! Many recipes out there for CNY Peanut Cookies call for roasting and grounding up peanuts.  This is an easy-peasy recipe that uses peanut butter.

Ingredients

  • 250g smooth peanut butter
  • 500g plain flour
  • 200g icing sugar
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 10 Tbsp. oil

Method

  1. Mix all ingredients in a mixing bowl.
  2. Shape dough into teaspoonful-size balls.  Flatten slightly.
  3. Brush with egg wash (1 beaten egg).
  4. Bake at 150C for about 25 minutes or until golden brown.

Makes about 80.

I used the end of a small funnel to make the distinctive circles that are characteristic of these cookies.
